1. Checking Meat Temperature by Type


  • Prime Rib Roast: Insert the thermometer into the thickest part, avoiding bone and fat. Best done after searing and left in while roasting and resting.

  • Chicken: Insert into the thickest section of the breast and thigh, ensuring it doesn’t touch bones or gristle.

  • Turkey: Insert into the thickest part of the thigh, breast, or wing, avoiding bone, gristle, or the pan. The thigh is the best spot as it takes the longest to cook.


2. Best Timing for Using a Meat Thermometer


  • Insert it toward the end of cooking but before the meat is expected to be done.

  • For turkey, place an oven-proof thermometer at the beginning of cooking to monitor temperature throughout.

  • For chicken, you can check it raw, partway through cooking, or just before it’s done.
